Gaia is an Italian restaurant in Cobham, Surrey — a restaurant interior design brief to bring Riviera warmth to a competitive Surrey high street, with a new sliding shopfront as the defining intervention

THE PROJECT

Part living room.
Part kitchen table.

The material-led palette does this work quietly and precisely. Deep green buttery faux leather and fresh light oak tones keep the feel airy but elegant — warm enough to invite at noon, considered enough to feel special at eight in the evening. Classical terrazzo adds the layer of tactile, enduring gravitas common to the great Italian dining rooms: a surface chosen because it ages beautifully, accumulating the patina of use rather than dating against it. Sustainable hospitality interior design — materials for the long run, not the opening week.

The space planning was reworked to support the full range of service, ensuring the room flows as easily from a weekday lunch as a leisurely Friday dinner. The new shopfront creates a genuinelydifferent relationship between the restaurant and the street — inviting in summer, glowing in winter. The guest experience shifts with the seasons, without any change to the interior itself.

Gaia Cobham is the kind of boutique, concept-driven hospitality interior that a neighbourhood adopts rather than merely visits — a space with enough character to feel genuinely local, enough quality to justify the journey from further afield. Relaxed enough to be a regular, considered enough to be a destination.

The project demonstrates the Day Studio conviction that enduring hospitality design is not a matter of budget or scale but of clarity of idea. A clear brief — Riviera warmth, neighbourhood ease, a room that works year-round — executed with material-led discipline and a shopfront that changes the restaurant’s relationship with the street entirely.
